Recipe: Pumpkin-Spice Bars

Yield: One 15.5" x 10.5" jelly roll panful (approx. 48 - 54 bars)
Time: 25-30 minutes at 350F

Ingredients:
  • 4 eggs
  • 2 cups of sugar
  • 1 cup of vegetable oil
  • 1 can of pumpkin
  • 2 cups of all-purpose flour
  • 2 tsp. baking powder
  • 2 tsp. ground cinnamon
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1/2 tsp. ground ginger
  • 1/4 tsp. ground cloves
  • 1 cup of raisins
  • cream cheese frosting
  • 1/2 cup of chopped walnuts
Method:
  1. beat eggs, sugar, oil and pumpkin in a large bowl until smooth
  2. stir in flour, baking powder, baking soda, salt, and spices
  3. stir in the raisins
  4. pour into a greased jelly roll pan
  5. bake at 350F for 25-30 minutes
  6. Let the pan cool on a rack, while you make the frosting
  7. frost the cake, and sprinkle on the chopped walnuts
Cream Cheese Frosting
  • 3 oz. of cream cheese, softened
  • 1/3 cup of butter, softened (approx. 2/3 of a stick)
  • 1 tsp. vanilla extract
  • 2 cups of powdered sugar
  1. cream together the cream cheese and butter
  2. mix in the vanilla
  3. stir in the powdered sugar little by little, until well incorporated and smooth
Notes: This comes out very much like carrot cake. You may want to add a little more of the spices than the recipe calls for; I found the spice a little on the subtle side, despite the fact that my jars of it were pretty new.
