Time: 25-30 minutes at 350F
Ingredients:
- 4 eggs
- 2 cups of sugar
- 1 cup of vegetable oil
- 1 can of pumpkin
- 2 cups of all-purpose flour
- 2 tsp. baking powder
- 2 tsp. ground cinnamon
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1/2 tsp. ground ginger
- 1/4 tsp. ground cloves
- 1 cup of raisins
- cream cheese frosting
- 1/2 cup of chopped walnuts
- beat eggs, sugar, oil and pumpkin in a large bowl until smooth
- stir in flour, baking powder, baking soda, salt, and spices
- stir in the raisins
- pour into a greased jelly roll pan
- bake at 350F for 25-30 minutes
- Let the pan cool on a rack, while you make the frosting
- frost the cake, and sprinkle on the chopped walnuts
- 3 oz. of cream cheese, softened
- 1/3 cup of butter, softened (approx. 2/3 of a stick)
- 1 tsp. vanilla extract
- 2 cups of powdered sugar
- cream together the cream cheese and butter
- mix in the vanilla
- stir in the powdered sugar little by little, until well incorporated and smooth
